In the far western edge of Slovenia where it borders Italy you'll find the Goriška Brda (pronounced Gor­-eesh­-Ka Bur­duh) wine region and the Kabaj winery (pronounced Ka-Bye).  This Pinot Grigio features the creamy texture and strawberry color of the Sivi Pinot that is the true color of the grape and on the opposite side of the spectrum as most Italian Pinot Grigios.

The grapes were hand harvested from the vineyards of Belo, Cujevca, and Jez, de-stemmed, and fermented for 2 weeks on the skins in large oak vats with wild yeast. The wine is transferred to used French barriques for malolactic fermentation and a subsequent 12 months total on the lees before being bottled unfiltered. Complex mineral tinged aromas of custard, dried stone fruits and brioche. Incredible density and length make it an ideal winter white and well suited for hearty vegetable dishes and cheeses.

The winery notes: "In the deepest point of the cellar, past the barrels, is an exposed wall of natural limestone with a spring whose colors inspire the earthy greens and browns of the Kabaj labels. In addition to artistic inspiration the spring serves a real purpose, of keeping the cellar appropriately humid and ideal for aging wine."
