Caprock Organic Vodka

CapRock™ Organic Vodka is a straight vodka made with Chambourcin grapes biodynamically grown at Jack Rabbit Hill, where the Peak Spirits distillery is located (Jack Rabbit Hill and Peak Spirits are demeter-certified biodynamic). The grapes are wild-fermented using native yeasts. No commercial yeasts or other additives are used to alter the character of the fruit. Native yeasts-which form and exist naturally on healthy, clean grapes-produce higher concentrations of glycerol during fermentation than artificial fermentations. Glycerol is the stuff that makes CapRock's mouthfeel and finish so round and rich. Also, the grapes are fermented and distilled whole, including skins and seeds, contributing soft fruit tannins to the long, textured finish. The redisitilled Biodynamic grape spirit is then added to organic neutral wheat spirit and fined with charcoal before bottling. CapRock Organic Vodka is 40% alc and available in 750ML and 200ML bottles.
